Cilantro Lime Cauliflower Rice and Beans

Cauliflower rice is everywhere.  It’s a simple swap for carbs and I when I make dishes with it I can honestly say I don’t miss the real thing because I can eat seconds, thirds and fourths without worrying about the cals!  Trader Joe’s and Whole Foods sell fresh and/or frozen riced cauliflower.  You can also rice cauliflower by pulsing the florets in a food processor or by using a cheese grater.

I use this rice as a base for burrito bowls- grab a roasted chicken from the grocery store, cotija cheese, avocado, your favorite salsa, the possibilities are endless. Cilantro and cayenne are super detoxifying and the lime keeps this dish bright and fresh.  Black beans provide some protein and enough carbs to keep you moving.

  • Riced cauliflower
  • 1 can black beans – drained and rinsed
  • 3 Limes
  • 1 bunch of cilantro, chopped
  • cayenne pepper
  • salt

  • Heat your favorite oil (I used sunflower) in a pan and sautee the riced cauliflower until soft.  7 -10 minutes depending on whether or not the rice is frozen

  • Remove from heat and add black beans

  • Squeeze the juice of limes over rice and beans

  • Add fresh cilantro

  • Add cayenne pepper to taste

  • Salt generously to taste
