GO TO Freezer Meal - Cauliflower Fried Rice

 

This meal is a go to because I always have the ingredients on hand.  The closest thing to  fresh is the garlic and ginger however, these days I keep jarred pre-minced versions of both to keep in the fridge... kind of life changing.

Here's how quick this is to make- after a 7 hour drive from SanFran to LA, everyone but me grabbed In-N-Out before we rolled up to my house (cue applause).   By the time my friends unloaded the car and sat down to eat their burgers, my gluten free, dairy free, grain free, veggie and protein packed meal was ready too.

  • FREEZER: 1 Bag Riced Cauliflower  1 cup Mixed Vegetables: peas, carrots, corn, green beans  1/2 cup Edamame

  • REFRIGERATOR:  2 Eggs  1 teaspoon minced garlic  1 teaspoon minced ginger

  • CONDIMENTS:  3-4 Tablespoons Trader Joe’s Soyaki Sauce (or something similar)

  • BONUS:  Coconut Oil  // Sesame Oil  // Red Pepper Flakes // Sriracha

Directions:  Heat the coconut oil in a large pan, add garlic and ginger.  Add frozen vegetables.   I alternate between covering the mixture (to help thaw vegetables) and stirring it around.  Once everything is thawed, add about 3 tablespoons of the sauce and sautee.

Either use a separate pan to scramble your eggs or make this a one pan wonder.  Make a pit in the middle of the cauliflower fried rice and scramble your eggs in the middle.  If you’re using a sticky pan add a bit more oil to help the scramble out.

Break the cooked eggs up a bit and mix it into the surrounding rice.

Drip some sesame oil (1 tsp) on top and sprinkle in some red pepper to finish.

Add more Soyaki sauce and Sriracha to taste.
